The only doctor I knew that did the whole procedure without any assistants was Dr Lars Heitman. Possibly Dr Bradley Wolf did some solo work.
Most, if not all others will have someone help them.
Having only one or two people involved in surgery will usually make the surgery longer and there may be fatigue issues depending on the size of the surgery.
Most clinics will have technicians sorting and planting the grafts under the supervision of a doctor.
As for does it matter, this depends on the skill and training of the people involved, how much the doctor is involved, or how much supervision is provided.
