Why does the robotic extraction pattern appear to be so uneven and not something that would appear logical to the human eye?

If you're going by the one pic hairtech posted on the Artas extraction pattern, it's only because we always plan on doing the manual the second day to clean and even out the pattern. Most other clinics who only use the Artas will have better patterns of extractions.

The robotic extraction pattern can look uneven when there are variations in the density of the donor area (either naturally occurring or due to small scars). The surgeon has the ability to skip extractions that the robot suggests if he considers them to be too close to one of these pre-existing scars or sparse areas. This can give the appearance of an uneven distribution of punches but will result in a more even density of hair growth throughout the donor area.
