I agree with TC if the sides don't drop and you can maintain at a NW5 level it could be possible for you to have a HT that would look realistic and meet your expectations.
Although you state no members of your family are NW6-7 there is always that risk that you could be that odd one out. It happens and i hope it does'nt for you. But as you well know this is something that you are probably considering anyway.
You mention you are happy to use concealors as you know you can not achieve a good density. But in my opinion with light hair, concealors can look quite fake on diffuse light hair. I have found in my experience the darker the hair, the more natural concealors look.
You mention you are considering x2 2000 FUE sessions with Dr De Reys. As you know that is not going to get you great coverage and as you are probably aware you have 2 options the Zinedine Zidane buzzed look or the higher hairline as what has already been suggested.
The good thing for you is that a buzzed look, suits you and if you go for the Zidane look then with a strong hairline at 5-10mm long, and getting shorter as your hair goes further back, with a slick crown then i think that is a perfectly feasible option and if i was your age and in your shoes that is exactly what i would do.
But what happens if you get into your 30s-40s and your sides go and you are heading in the NW6-7 direction, it could look ridiculous and although your family history does not suggest this you need to have a back up plan in case it does.
Which is why the 2nd option of having a higher hairline may be the better long term solution.
Now in terms of back up plans you have body hair FUE, and the possibility of new treatments on the horizon. However i would not have too much faith in new treatments, Finasteride has been around since the late 80s/early 90s and no better drug has yet to come to market, although Avodart is slightly better.
And of course the other option is to do nothing and embrace baldness, which i dont think is what you want to do.
